Celebrate Baba Chews 10th anniversary with Across the Straits, a six-course 4-hands dining collaboration between Hotel Indigo Singapore Katong and Hotel Indigo Bintan Lagoi Beach.
For 16 nights only, Head Chef Huang Jiaxing of Baba Chews joins forces with Chef Erik Gremmer, Cluster Executive Chef of Hotel Indigo Bintan Lagoi Beach, to present a culinary journey inspired by two distinctive neighbourhoods connected by the South China Sea.
Drawing from Katong’s Peranakan heritage and Bintan’s Riau Malay traditions, the menu brings together bold local flavours, island-grown ingredients and contemporary culinary techniques. Each course tells a story of place, memory and cultural ties shared acrossed both coastlines.

A Six-Course Journey from Katong to Bintan
The experience begins with the Katong Kiss, a refreshing welcome drink of lychee, rose and calamansi.

Guests will then journey through a menu featuring the Singapore Chilli Crab Bao with Bintan Bamboo clams

and Baba Chew’s signature Nasi Lemak Risotto with King Prawn and Bintan Turmeric Squid

The savoury courses culminate in Baba Chew’s Beef Cheek Rendang, slow-braised in a deeply-layered Peranakan spice paste and served with fragrant nasi ulam and house achar.

To conclude, the Gula Melaka Coconut Burnt Cheesecake is paired with pistachio sea salt ice cream – a modern expression of familiar flavours shared across Katong and Bintan.
